
Who else feels like they are being re-born to the world? The world is opening back up. I opened all my windows; letting the sun and air in. Most of you can take a guess at what came next. I started baking. The house is warm from the sunlight and the stove silently toasting edges of homemade bread. Hello summer! I greet you with good intentions and freshly made banana bread.
Ingredients:
- 1/2 cup of unsalted butter (melted)
- 1/4 cup white sugar
- 1/2 cup brown sugar
- 2 eggs (medium to large in size)
- 1 tsp. vanilla extract
- 3 ripe bananas (medium to large in size)
- 1/2 cup Greek yogurt
- 1 1/2 cup of flour (sifted)
- 1 tsp. baking soda
- 1/2 teaspoon salt
- 1 cup walnuts (chopped)
Instructions:
- Preheat oven to 350°.
- In a large mixing bowl mash 2 of the bananas.
- Mix in the sugar, vanilla, yogurt and eggs.
- Mix in flour, baking soda, and salt.
- Fold in chopped walnuts.
- Transfer mixture to a loaf pan. ( line with parchment paper or oil the pan)
- Halve the remaining banana length wise and press into the bread mixture.
- Sprinkle 1 -2 teaspoons of brown sugar on top before putting in the oven
- Bake for 60 mins.

After baking you can top with some toasted walnuts or . . .
Simple Vanilla Icing/Glaze:
- 1 cup confectioners’ sugar
- 2 tbs. milk
- 1/2 tsp. vanilla extract
Banana Icing/Glaze:
- 1 cup confectioners’ sugar
- 2 tbs. milk
- 1 tsp. banana extract
