Boss Ass Banana Bread

Who else feels like they are being re-born to the world? The world is opening back up. I opened all my windows; letting the sun and air in. Most of you can take a guess at what came next. I started baking. The house is warm from the sunlight and the stove silently toasting edges of homemade bread. Hello summer! I greet you with good intentions and freshly made banana bread.

Ingredients:

  • 1/2 cup of unsalted butter (melted)
  • 1/4 cup white sugar
  • 1/2 cup brown sugar
  • 2 eggs (medium to large in size)
  • 1 tsp. vanilla extract
  • 3 ripe bananas (medium to large in size)
  • 1/2 cup Greek yogurt
  • 1 1/2 cup of flour (sifted)
  • 1 tsp. baking soda
  • 1/2 teaspoon salt
  • 1 cup walnuts (chopped)

Instructions:

  1. Preheat oven to 350°.
  2. In a large mixing bowl mash 2 of the bananas.
  3. Mix in the sugar, vanilla, yogurt and eggs.
  4. Mix in flour, baking soda, and salt.
  5. Fold in chopped walnuts.
  6. Transfer mixture to a loaf pan. ( line with parchment paper or oil the pan)
  7. Halve the remaining banana length wise and press into the bread mixture.
  8. Sprinkle 1 -2 teaspoons of brown sugar on top before putting in the oven
  9. Bake for 60 mins.

After baking you can top with some toasted walnuts or . . .

Simple Vanilla Icing/Glaze:

  • 1 cup confectioners’ sugar
  • 2 tbs. milk
  • 1/2 tsp. vanilla extract

Banana Icing/Glaze:

  • 1 cup confectioners’ sugar
  • 2 tbs. milk
  • 1 tsp. banana extract
