
Someone recently told me that chicken breasts are boring. {PAUSE} When have breasts ever been boring?! Perky or seasoned. Lemon pepper seasoning is one of my favorites and a telltale sign of a Chicago City Girl. It is the equivalent of kitchen fairy dust. Armed with a little homemade magic and a few ounces of chicken breast I had but one goal. Redeem the breast!
Ingredients:
- 4 Skinless Chicken Breast
- Cracked Black Peppercorn (1 tablespoon)
- Parsley (1 tablespoon, finely chopped)
- Lemon (2 teaspoons of juice, 1 teaspoon of zest)
- Garlic (2 teaspoons, minced)
- Honey (2 tablespoons)
- Crushed Red Pepper (1 teaspoon)
- Thyme (2 teaspoons)
- Oregano (1 teaspoon)
- Olive Oil (2 tablespoons)
- Coarse Salt (2 teaspoons)
Instructions:
- Heat oven to 400 degrees.
- Mix together cracked peppercorn, crushed red pepper, thyme, oregano, and salt. Set aside.
- Coat chicken breasts with olive oil and lemon juice.
- Place on a baking rack.
- Add zest, garlic, and honey. *I sliced the rest of the lemon and placed on top of the chicken breasts as well.
- Add lemon pepper seasoning.
- Bake for 25 – 30 minutes.
- After removing from the oven add parsley and serve.
